Horchata de Chufa Tigernut Milk
Legend has it that King Jaime, on a tour of Valencia, where tiger nuts have been grown for 1000 years and where tigernut milk has been made since the 1600's, was given a drink by a young girl. After enjoying it, he asked for the name of the drink to which the girl replied "tigernut milk". Jaime replied, "that's not milk, that's Or, Xata (Gold, girl), and that's how the name Horchata (Silent H) came about.
